Thai chicken lettuce wraps

Ingredients

  • 1 small chicken breasts (approx. 150g) 
  • 1/2 carrot
  • 2 large lettuce leaves 
  • 1 tomatoes 
  • 1/2 cucumber 
  • 1/4 red onion 
  • 1/2 tbsp sweet chilli sauce 
  • 1/2 tsp minced garlic 
  • 1 tbsp soy sauce 
  • 1/2 lime (juice)

Method

  1. Make sauce - in a small bowl mix sweet chilli, soy, garlic and lime.
  2. Cut chicken into slices and add to sauce mix and let soak for 15 minutes (if possible).
  3. Heat frying pan and spray with oil.
  4. Cook chicken and sauce mix on frying pan approx. 3 minutes each side or until cooked through.
  5. While cooking prepare lettuce wraps.
  6. Spread the carrot, tomatoes, onion and cucumber between the 4 lettuce leaves.
  7. Add chicken and enjoy two lettuce wraps.
