Makes 4 rolls

Ingredients

  • 2 x 210g can tuna in spring water drained
  • 2 x tablespoons plain greek yoghurt
  • 4 x nori sheets
  • 1/2 x carrot
  • 1/2 x capsicum
  • 1/2 x cucumber
  • 1/2 x avocado

Method

  1. Mix tuna and yoghurt in bowl and stir.
  2. Thinly slice carrot, capsicum and cucumber.
  3. Place nori sheet on baking paper and spread 1/4 of the tuna mix over nori sheet leaving a border all around.
  4. Put 1/4 of your veggies and a slice of avocado in the middle of the tuna.
  5. Roll the nori into a sushi roll.
  6. Repeat x 4.
  7. Cut each roll in half and eat.
