Still think salads are just rabbit food? This bad boy beef and haloumi salad recipe will change your mind. It's a protein-packed summer go-to with juicy strips of beef and golden halloumi chunks - you can even prep it on the barbecue.

Ingredients
- 100g lean steak cut into strips or lean beef strips
- 30g halloumi, cut into slices
- 100g pumpkin, cut into cubes
- 1 Tbsp balsamic glaze
- 1/2 red capsicum, chopped finely
- 1/4 red onion, finely sliced
- 1 cup baby spinach
- 1/2 cucumber, sliced
Method
- Preheat oven to 180 degrees
- Line a baking tray with baking paper
- Place pumpkin on the tray and cook for 30 minutes or until roasted and golden
- Meanwhile, heat a non-stick pan over medium to high heat
- Cook the beef until cooked to your liking and set aside to rest
- In the same pan fry the halloumi until golden brown
- Assemble salad ingredients and cooked beef, pumpkin and halloumi together and top with the balsamic glaze
- Serve and enjoy!
